PREPARATION:
Step 1
If you are going to use leftover stuffing, you need to make sure that it is at room temperature. You may also make stuffing from scratch using your preferred method.
Step 2
Mix together the cooked sausage or bacon (if using), cooked onion, chopped celery, prepared stuffing, grated Parmesan cheese, chopped parsley, dried sage, dried thyme, salt, and pepper in a large mixing dish.
Step 3
Make sure the flavors are distributed evenly by mixing the ingredients completely. Mix the eggs with the filling ingredients. The eggs will act as a binder, keeping everything together.
Step 4
Form the mixture into golf-ball-sized balls using your palms. As you roll the mixture into balls, give each one a gentle press to help it maintain its shape.
Step 5
Coat each stuffing ball equally with all-purpose flour as you roll it. Fry the flour to get a crunchy coating.
Step 6
In a large frying pan or cast-iron skillet, heat the oil over moderate heat. There should be around 350F (175C) of oil temperature. Be careful not to crowd the pan as you drop the coated stuffing balls into the heated oil.
Step 7
If you were raised in the South, you likely had these potatoes a few times a month. It’s still a dish I crave today!
