THESE ARE THE INGREDIENTS YOU’LL NEED:
– 8-oz.Of tricolor rotini pasta.
– 1 Cup.Of cherry tomatoes, halved.
– 1 Cup.Of cucumber, diced.
– 1 Cup.Of bell peppers (red, yellow, or green), diced.
– 1/2 Cup.Of black olives, sliced.
– 1/4 Cup.Of red onion, thinly sliced.
– 1/4 Cup.Of fresh basil leaves, chopped.
– 1/4 Cup.Of fresh parsley, chopped.
– 1/4 Cup.Of grated Parmesan cheese (optional).
FOR THE DRESSING, I USED:
– 1/4 Cup.Of extra-virgin olive oil.
– 2 Tbsp.Of red wine vinegar.
– 1 clove garlic, minced.
– 1/2 Tsp.Of dried oregano.
– 1/2 Tsp.Of dried basil.
– 1/2 Tsp.Of salt.
– 1/4 Tsp.Of black pepper.
