3 cups cake flour, sifted
1 teaspoon lemon extract
1 teaspoon vanilla extract
Pineapple Filling
Cream Cheese Frosting:
1 (6-ounce) package frozen flaked coconut, thawed
Garnish: fresh mint sprig
