Preparation
To make a biscuit, whisk the egg yolks with the sugar in a bowl until the mixture turns white.
Add the flour and mix.
Beat the egg whites until stiff and add the tablespoon of sugar halfway through.
Then pour the butter and the beaten egg whites together over the previous mixture, incorporate everything delicately.
Spread parchment paper on a baking sheet and pour the biscuit mixture onto it, spreading the surface well.
Cook in a preheated oven for around 7 minutes at 240°C with fan-forced heat.
Remove the tray from the oven and turn the biscuit over on a clean, dry cloth and gently roll it over itself, and tighten well.
Leave to cool aside
To prepare the caramel, put the sugar in a saucepan over low heat.
This was a staple from Granny every year, and I always spaced on taking notes. Super pumped to find a close match!
