- 1st Step – Preheat your oven to 375°F (190°C). To make the crust, combine the flour and salt in a mixing bowl. Add the cold cubed butter and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
- 2nd Step – Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Be careful not to overwork the dough. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- 3rd Step – Roll out the chilled dough on a lightly floured surface into a circle large enough to fit your pie dish. Carefully transfer the dough to the pie dish, pressing it into the bottom and up the sides. Trim any excess dough and crimp the edges as desired.
- 4th Step – Prick the bottom of the crust with a fork to prevent air bubbles from forming during baking. Line the crust with parchment paper and fill with pie weights or dried beans.
- 5th Step – Bake the crust in the preheated oven for 15 minutes. Remove the parchment paper and weights, then continue baking for an additional 5 minutes, or until the crust is lightly golden brown. Remove from the oven and set aside.
- 6th Step – While the crust is baking, prepare the filling. In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- 7th Step – Sprinkle the cooked and crumbled bacon evenly over the bottom of the pre-baked pie crust. Top with shredded cheese. Pour the egg mixture over the bacon and cheese, distributing it evenly.
- 8th Step – Return the quiche to the oven and bake for 30-35 minutes, or until the filling is set and the top is golden brown. Remove from the oven and let the quiche cool for a few minutes before slicing. Garnish with chopped fresh parsley, if desired, before serving.
