2 large eggs, beaten
1 cup panko breadcrumbs (or your preferred type)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
1/2 tsp paprika (optional)
Vegetable oil for frying
Half a lemon, sliced
Optional: grated Parmesan cheese
Dipping sauces like marinara, ranch, or tzatziki
Instructions:
Prepare the Dredging Station:
Set up three shallow dishes.
Place flour in the first dish.
Beat the eggs in the second dish. For a thinner consistency, add a tablespoon of water.
Combine breadcrumbs, salt, pepper, garlic powder, and paprika in the third dish.
Dry the Zucchini:
Shake off excess flour from each zucchini slice or stick.
Dip the floured zucchini into the beaten eggs, allowing any extra to drip off.
Coat each piece thoroughly with the breadcrumb mixture. Place on a platter.
