Directions
Melt the butter in a large saucepan over low heat.
Add the mini marshmallows and stir until completely melted. Remove from heat.
Stir in the chocolate chips until they’re fully melted and mixed with the marshmallow mixture.
Add the vanilla extract and mix well.
If you’re an extra chocolate lover, sift in the cocoa powder and stir until fully incorporated.
Gently fold in the Rice Krispies cereal until all pieces are evenly coated with the chocolate mixture.
Let the mixture cool slightly until it’s easier to handle, but not too hard to mold.
With buttered hands, shape the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
Allow the balls to cool and firm up, about 15-20 minutes before serving.
Variations & Tips
For a festive touch, roll the balls in sprinkles or crushed nuts while they’re still warm. You can also drizzle with white chocolate or add a handful of mini M&Ms for an extra burst of color and flavor. If you’re feeling adventurous, try adding a pinch of sea salt on top for a sweet and salty combo. For a healthier alternative, use dark chocolate chips and reduce the amount of marshmallows.
