My aunt gave me this recipe, and I thought I had lost it. I’m happy I found something alike. This one is even more excellent!
List of ingredients:
2 cups of white sugar
1/2 cup of evaporated milk
1/2 cup of corn syrup
1/2 cup of butter without salt
1/4 of a small spoon of salt
2 cups of chopped toasted pecans
2 cups of grated coconut
1 teaspoon of vanilla flavoring
Instructions:
Place a few sheets of wax paper on your kitchen counter before you begin – this is where these delicious treats will cool down.
In a medium pot, mix together the sugar, evaporated milk, corn syrup, butter, and salt. Mix this combination on medium heat until the butter melts and everything is thoroughly combined.
Let the mixture boil completely, then let it simmer for around 3 minutes, stirring from time to time. We want it to reach the ideal praline texture.
Take your pot off the stove. Mix the toasted pecans, shredded coconut, and vanilla extract until everything is well combined.
Use a tablespoon or a small ice cream scoop to place the mixture on the wax paper. Don’t worry about making them perfectly round; their simple charm is what makes them attractive!
Allow the cookies to cool until they are no longer soft to the touch. This usually takes around 20-30 minutes, but I won’t tell if you have one a little earlier.
Different Types & Advice:
For a richer taste, toast your pecans in a pan without oil over medium heat before cutting them. Make sure to keep them moving so they don’t get burned, and you’ll know they’re ready when they smell amazing.
If you really want chocolate, add half a cup of chocolate chips when the mixture has cooled a bit, or pour melted chocolate on top of the cookies.
If you have dietary limitations, replace the evaporated milk with coconut milk and use a butter alternative that is free of dairy.
To keep your No-Bake Coconut Pecan Praline Dreams fresh, store them in a sealed container. If it’s hot and humid, put them in the fridge – they will last longer.
