Pinch the apple closed and cover. Place in a baking dish. {This is easier if you pat the apple slices dry first and then wrap the dough around them.}
Melt the butter in a saucepan and stir in the sugar and cinnamon. Heat and whisk until combined.
The mixture will slowly combine and thicken. When the mixture has thickened, remove from heat and stir in the vanilla.
Pour the cinnamon mixture over the apple dumplings. Pour soda over the dumplings. Bake in the preheated oven for 40-45 minutes, or until golden brown!!!
