Step 1: Prepare the banana pudding filling
In a small bowl, combine the mashed banana, vanilla pudding, powdered sugar, and vanilla extract. Mix until smooth and creamy.
Set the filling aside to allow the flavors to meld while you prepare the French toast mixture. Step 2: Assemble the Stuffed French Toast
Take each thick slice of bread and spread a generous amount of banana pudding filling on one side.
Place another slice on top to create a “sandwich,” pressing gently to hold the filling in place. Repeat with the remaining slices until you have four stuffed French toasts.
Step 3: Prepare the French Toast Mixture
In a shallow bowl, whisk together the eggs, milk, ground cinnamon, nutmeg, and vanilla extract until well combined.
Dip each sandwich into the egg mixture, coating both sides evenly. Allow the bread to soak in the flavors without becoming too soggy.
Step 4: Cook the French Toast
Heat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
Once the butter has melted and is sizzling, place two of the stuffed French toasts in the skillet.
Cook for 2-3 minutes on each side, or until golden brown and crispy. Press gently with a spatula to ensure the filling heats through.
Transfer the cooked French toast to a plate and cover to keep warm. Repeat with the remaining sandwiches, adding more butter to the pan as needed.
I loved these so much back then. I’d constantly pester my mom to cook them.
