With the perfect balance of savory shrimp, creamy grits, and a kick of Cajun spice, it’s sure to bring the bold flavors of Louisiana straight to your table. Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
2 tablespoons Cajun seasoning
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic, minced
1/2 cup chicken broth
1/2 cup heavy cream
1 tablespoon lemon juice
Salt and pepper to taste
For the Grits:
1 cup stone-ground grits
4 cups water or chicken broth
1 tablespoon butter
1 cup sharp cheddar cheese, shredded
Salt and pepper to taste
Directions:
Prepare the Grits:
Bring 4 cups of water (or chicken broth for added flavor) to a boil in a medium pot.
Slowly stir in the grits, reduce the heat to low, and cook, stirring occasionally, for 25-30 minutes until the grits are tender and have absorbed most of the liquid.
Stir in butter, cheese, and season with salt and pepper. Set aside to keep warm.
