Preparation:
1. Preheat your oven to 200°C (th.7).
2. Peel the garlic cloves and cut them in half.
3. Make a few cuts in the roast beef and insert the pieces of garlic into these cuts.
4. Brush the roast with olive oil, then sprinkle with thyme, salt and pepper.
5. Place the roast in an ovenproof dish.
6. Place in the oven and cook for about 25 to 30 minutes for rare cooking, or adjust the cooking time according to your preference (15 minutes per 500 g for rare).
7. Remove the roast from the oven, cover with foil and let rest for 10 minutes before slicing.
8. Serve hot, accompanied by roasted vegetables or potatoes.
