Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/4 inch thickness.
Season the chicken with salt and pepper, then dredge in flour, shaking off any excess.
In a large skillet, heat the olive oil and butter over medium-high heat.
Add the chicken breasts to the skillet and cook for about 3-4 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
Pour in the chicken broth, lemon juice, lemon zest, and oregano. Stir to combine and bring to a simmer.
Add the spinach leaves to the skillet and cook until wilted, about 2 minutes.
Return the chicken to the skillet and spoon the sauce over the top. Cook for an additional 2 minutes to heat through.
Sprinkle with fresh parsley before serving.
