Ingredients:
For the Filling:
3 cups cooked, shredded chicken (rotisserie chicken works great)
8 oz (1 block) cream cheese, softened
1 cup sour cream
1 can (4 oz) diced green chilies
1/2 cup shredded cheddar or Monterey Jack cheese
1 tsp garlic powder
1 tsp cumin
1/2 tsp chili powder
Salt and pepper to taste
For the Enchiladas:
10-12 medium-sized flour or corn tortillas
1 can (10 oz) enchilada sauce (red or green, depending on preference)
1 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
Fresh cilantro or green onions for garnish (optional)
Instructions:
