Today I want to share with you a recipe for strawberry jam, which turns out to be very transparent, but the berries remain intact and retain their bright color. Strawberries of different sizes are suitable for jam.
I take a large saucepan or frying pan, pour a little water into it so that the strawberries do not burn. I add the berries and cook over medium heat for 5-8 minutes, stirring occasionally. During cooking, the strawberries will soften slightly and release juice.
I add citric acid – it is optional, but I prefer to use it to balance the taste and preserve the bright color of the jam. In addition, thanks to citric acid, the jam does not become sugary.
Carefully dissolve the citric acid, add sugar and mix well. After that, I bring the mixture to a boil and cook for another five minutes, periodically removing the foam.
