2 cups broccoli florets
2 cups cauliflower florets
1 cup cherry tomatoes, halved
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon apple cider vinegar
1 tablespoon honey
Salt and pepper to taste
1/4 cup chopped red onion
1/4 cup shredded cheddar cheese
1/4 cup sunflower seeds
Directions
1. In a large bowl, combine the broccoli florets, cauliflower florets, and halved cherry tomatoes.
2. In a separate small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, salt, and pepper until smooth.
3. Pour the dressing over the vegetables and toss until everything is well coated.
4. Add the chopped red onion, shredded cheddar cheese, and sunflower seeds to the salad and gently mix.
5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
Decided to cook this for dinner, and guess what? My hubby and I couldn’t resist, and he ate more than half of it.
