– Want more heat? Add a finely diced jalapeño to the mayo mixture or sprinkle with a little cayenne pepper.
– Not a fan of cilantro? Fresh chives or parsley can be a fine alternative.
– If you’re without a grill, the corn can be cooked in a skillet over medium heat or roasted in the oven until tender. The aim is to coax out that smoky, caramelized sweetness, no matter the method.
