Asparagus Tomato Salad with Burrata Cheese
Ingredients:
1 bunch fresh asparagus, trimmed
1 pint cherry tomatoes (or any small tomatoes), halved
1 ball burrata cheese (about 8 oz)
1 tablespoon olive oil (plus more for drizzling)
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon balsamic vinegar (optional)
Salt and freshly ground black pepper, to taste
Fresh basil or parsley, chopped (for garnish)
1 tablespoon honey (optional, for a hint of sweetness)
1/2 teaspoon garlic powder (optional, for added flavor)
Instructions:
1. Prepare the asparagus:
Trim the woody ends off the asparagus and cut the stalks into 2-3 inch pieces.
Bring a pot of water to a boil and blanch the asparagus by placing it in the boiling water for 2-3 minutes, until the asparagus is bright green and tender-crisp.
Immediately transfer the asparagus to a bowl of ice water (or run under cold water) to stop the cooking process. Drain well and set aside.
