Step 1: Prepare the Crab Mixture
- Preheat your oven to 325°F (160°C).
- In a medium bowl, whisk together the egg yolks, heavy cream, Dijon mustard, cayenne pepper, smoked paprika, and chopped chives.
- Gently fold in the lump crab meat, taking care not to break up the delicate pieces.
- Season with salt and freshly ground black pepper to taste.
Step 2: Assemble and Bake
- Divide the crab mixture evenly among the four ramekins.
- Place the ramekins in a deep baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins (creating a water bath).
- Bake for 30-35 minutes, or until the custard is set but still slightly wobbly in the center.
- Carefully remove the ramekins from the water bath and allow them to cool to room temperature. Then refrigerate for at least 2 hours.
Step 3: Caramelize the Top
- Before serving, sprinkle about 1/2 tablespoon of granulated sugar over each custard.
- Using a kitchen torch, caramelize the sugar until it forms a golden, crisp crust. Alternatively, place the ramekins under a broiler for 1-2 minutes.
