
**Mediterranean Salad with Feta and Olives**
**Ingredients:**
– 1 cucumber, cut lengthwise and sliced
– 1 green bell pepper, thinly sliced
– 2 cups halved cherry tomatoes
– 1/3 cup thinly sliced red onion
– 25g feta cheese, cut into ½ inch cubes
– 1/3 cup pitted olives
– 1/3 cup fresh mint leaves
**For the Dressing:**
– ½ cup extra-virgin olive oil
– 3 tablespoons red wine vinegar
– 1 garlic clove, minced
– ½ teaspoon dried oregano, plus more for sprinkling
– ¼ teaspoon Dijon mustard
– ¼ teaspoon sea salt
– Freshly ground black pepper
**Instructions:**
**1. Make the Dressing:**
– In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, Dijon mustard, salt, and freshly ground black pepper.
