1. Getting the syrup ready
In a saucepan, mix sugar, water and lemon juice.
Bring to a boil and let simmer for 5-7 minutes.
Out of the fire, add orange blossom water and let cool.
2. Preparing the cream (Ashta)
In a saucepan, mix milk, corn and sugar.
Heat over medium heat and stir to thicken.
Add the water of orange blossom, mix and let to cool.
3. Preparing basbousa dough
In a bowl, mix semolina, sugar, chemical yeast, yogurt, milk, melted butter and orange blossom water.
Pour half of the batter into a buttered mold and smooth the surface.
Gently spread the cream on top.
Cover with rest of the batter and smooth again.
Add whole almonds on top for decoration.
4. Baking
Preheat the oven to 180°C.
Bake for 30 to 35 minutes, until the basbousa is golden brown.
Upon coming out of the oven, immediately pour the cooled syrup over the hot cake.
Allow to absorb and cool before cutting into squares or slices.
