Step 1: Prepare the Broth
Start by placing the leftover chicken (bones, skin, and meat) into a large pot. Add 4 cups of water to cover the chicken and bring it to a simmer. Allow the mixture to cook for about 45 minutes, or until the chicken meat falls off the bones easily. This process extracts all the flavors from the chicken, creating a rich homemade broth.
Once the chicken is cooked, carefully remove it from the pot and set it aside. Discard the bones and skin, as they won’t be needed. Shred the chicken meat with a fork or your hands, and return the shredded meat to the pot. You now have the foundation for your chicken noodle soup.
Step 2: Cook the Vegetables
Next, add the diced carrots, celery, and onion to the pot with the broth. Stir the vegetables into the liquid and bring the mixture back to a simmer. Let the vegetables cook for about 10 to 15 minutes, or until they are tender but still slightly firm. The simmering process will infuse the broth with the flavors of the vegetables.
Step 3: Add Flavor Enhancers
To take the soup to the next level, it’s time to add some extra flavor. Stir in the V8 tomato juice, chicken broth, and Better Than Bouillon roasted chicken base. These ingredients provide depth and richness to the soup, elevating its taste and making it even more satisfying.
Season the soup with salt to taste and sprinkle in some dried parsley flakes. The parsley adds a subtle herbal note, balancing the richness of the broth with a fresh, green flavor.
Step 4: Add the Egg Noodles
Now it’s time to add the egg noodles to the soup. Stir them in and cook for 8 to 10 minutes, or until they are tender and have absorbed the delicious broth. Make sure the noodles don’t overcook, as you want them to remain slightly firm and hold up in the soup.
