- 4 large eggs

- 1 large red onion, diced

- 1/4 tsp black pepper
- 1 tbsp olive oil

Step-by-Step Instructions
- Start by boiling the cubed potatoes in a pot of water until they are tender, about 10 minutes. Once done, drain and set aside.
- While the potatoes are boiling, heat the olive oil in a large skillet over medium heat. Add the chopped chicken franks and diced onion. Sauté until the sausage is browned and the onion is soft and translucent, about 5 minutes.
