12 cups water

tablespoons butter
cup finely diced onion
ribs celery diced
tablespoons flour optional
2 ½ cups leftover cooked turkey diced
1 teaspoon salt more to taste
1 teaspoon pepper
¼ teaspoon dried thyme
8 oz uncooked dried egg noodles
¼ cup fresh parsley finely chopped
