1. Prepare the Salmon and Steak:
Preheat the oven to 400°F (200°C).
Season the salmon fillets and steaks with salt and pepper.
Spread a thin layer of pesto sauce on top of each salmon fillet, pressing gently to adhere the pesto.
In a skillet, heat 1 tablespoon of olive oil over medium-high heat.
Sear the salmon fillets skin-side down for 2-3 minutes until the skin is crispy. Transfer to the oven and bake for 7-10 minutes, depending on thickness, until cooked through.
For the steaks, heat another tablespoon of olive oil in the same skillet over medium-high heat. Sear the steaks for about 3-4 minutes per side, or until your desired level of doneness. Let the steaks rest for a few minutes before serving.
2. Prepare the Basil Cream Sauce:
In a small saucepan, melt the butter over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the heavy cream and bring to a simmer.
Stir in the chopped basil and grated Parmesan cheese, and cook for 3-4 minutes, stirring occasionally, until the sauce thickens.
Season with salt and pepper to taste.
After eating this, I’m never having salmon any other way!
